Sunset drinks on the lagoon: a softer golden hour in Saint-Martin
Golden hour on the lagoon is not the same as golden hour on a cliff. The water throws a horizontal shimmer; the heat eases; conversations stretch. Our bar leans citrus-forward spritzes, herbaceous low-ABV builds, and classic French aperitifs reinterpreted with island fruit.
Three moods, three orders
- Crisp & salty: oysters and something bubbly.
- Tropical without syrup: rum treated like a seasoning, not a dessert.
- Bitter & refreshing: the kind of drink that resets your palate before dinner elsewhere—or keeps you anchored here.
If you are building an evening across Marigot and the western French side, consider stopping early enough to catch the lagoon while it still reads blue, then watching it turn pewter as the sky warms up.
